At The Fairmont Mayakoba, we work with Ocean Leader S.A., which purchases Caribbean lobster (Panulirus argus) from the Punta Allen co-operative, within the Sian Ka’an Biosphere Reserve. This co-operative applies special techniques to capture the lobster in a sustainable manner, thus being able to maintain and even increase the lobster population in the area. Thanks to this innovative method where young and female lobsters are spared, this kind of fishing is scientifically qualified as sustainable. Through the purchase of sustainable lobster,  Fairmont Mayakoba supports the economic development of the local communities within the Sian Ka’an Biosphere Reserve and offers its guests the best fish and seafood options in the region.

Additionally, Fairmont Mayakoba ensures that its seafood vendors comply with all legal requirements, by asking them for all pertinent permits and refraining from the purchase of products that are seasonally banned.

Cooking classes

Anguilla’s golf course will be open for play

Golfers will be excited to learn that Anguilla’s golf course will be open for play in just a week. On December 19, 2009 Cap Juluca will proudly reopen and manage Anguilla’s first and only public golf course, a $50 million creation of Greg Norman, the Temenos Golf Course.

“We are all very excited about being able to offer such an elevated level of Caribbean golf to our guests at Cap Juluca and all the residents of and visitors to Anguilla,” reports Cap Juluca General Manager Gary Thulander. “We’re especially thrilled that the course will be open in time for the holiday season, offering visitors to Anguilla a complete vacation experience.”

This 7,063-yard championship course was designed by golf legend Greg Norman and first opened in 2006. It offers dramatic elevation changes, water features on 13 holes and, with the help of Cap Juluca’s brand of hospitality this season, one of the finest golf experiences in the Caribbean.

Temenos Golf Course offers a golfing experience where sand, wind and water blend seamlessly with Anguilla’s natural environment to present a golfer’s paradise. Some of its signature holes include:

Players being greeted by a spectacular vista of St. Maarten and the Caribbean Sea at the tee box of the 390-yard starting hole. The fairway descends over 40-feet to a narrow, two-tiered green sitting precariously on the edge of a saltwater lagoon. Robb Report called this first hole, “The Caribbean’s answer to the 18th at Pebble Beach.”

Large sand dunes on the left and a saltwater pond on the right framing the perilous drive on the 440-yard 16th hole that plays dead into the trade winds and ends with an elevated green surrounded by water and protected by deep bunkers.

The drive for the finishing hole carrying the edge of the mangrove thicket in a vast stretch of saltmarsh that winds through eight of the course holes. The narrowing fairway ascends forty feet through rugged terrain to a narrow green carved out of the native shrub.

- The Super Twin Otter is also available for charter from Miami, Ft. Lauderdale and Nassau direct to Copperfield Bay.
- By Boat:  If guests prefer to arrive at Copperfield Bay by one of our watercraft options, our staff will arrange for transportation from the airport to a dock on Great Exuma, for the boat transfer.  Travel time is about one hour from Great Exuma.
- Copperfield Bay can accommodate yachts up to 200 ft. in length, with its protected anchorage facilities and excellent deep water docking.

Location

Necker Island is located in the British Virgin Islands, a stunning and unspoilt area of the Caribbean. You can reach Necker via San Juan (Puerto Rico), St Thomas, Antigua or Barbados followed by a connecting flight to Beef Island, Tortola.
